What is Indian-Style Creamy Macaroni?

A mouth-watering delightful recipe with the fusion of Indian flavours and classic macaroni pasta will leave you wanting more. The addition of healthy veggies of your choice like baby corn, capsicum, carrots, and green beans adds the nutritional value to this Indian-style creamy macaroni. You can customise the veggies of your choice that suit your taste. I usually don’t add much veggies to my macaroni and like it to be simple.

Many variants of macaroni are available in the market. I prefer using elbow macaroni which is semi-curved in shape. You can give a twist to your macaroni and swap it with other pasta varieties like penne, shell pasta, etc. The delicious and tangy flavour is given to the macaroni with the onion and tomato base masala. The masala is normally not overly spicy, making it ideal for the kids.

Some flavour enhancers like dried herbs, chilli flakes, and oregano are added to it. Cheese is not added to Indian-style macaroni, but feel happy to add them if you want. A comforting and indulging flavour is created by adding the creamy masala sauce at the end that coats the macaroni. This is the special twist to the classical mac and cheese, that combines the taste of Italian and the Indian flavour. Serve this when your child comes home hungry or at birthday parties and see the glow on their face.

  • Cook time: 15 minutes
  • additional time: 5-8 minutes

What you’ll need?

Macaroni: 300 gm

Amul fresh cream: 80 gm

Amul mozzarella cheese (grated): 50 g

Onion: 200 gm

Tomato: 100 m

Ghee: 4 tablespoon

Refined oil: 1 tablespoon

Magic masala: ½ tablespoon

Grounded black pepper: ¼ tablespoon

Origano: ¼  tablespoon

Red chilli flakes: ¼  tablespoon

Salt to taste

Procedure

Step 1: First thing first, take some water in a saucepan and boil it. Once the water starts boiling, put macaroni in it. Add 1 tablespoon of refined oil and ½ tablespoon salt in the water. Once the macaroni is cooked properly, drain the water and wash the macaroni with cold water.

  1. Raw macaroni                                     b) Cooked macaroni
  • Points to note:
  1. Adding oil will stop the macaroni from overcooking. We most often add oil while boiling starchy food like pasta or rice. By adding oil, the proteins that are released into the water will make it thicker. The oil droplets will sneak between the bubbles which causes them to pop and fizzle before they grow in size and stop the water from boiling over the pan.
  2. Washing the macaroni with cold water serves three purposes at the same time. First, it will immediately stop the cooking process by bringing the temperature down. Second, it will stop the macaroni from becoming gummy and clumping together and third, it will wash away the extra starch present on the surface of the macaroni.

Step 2: While the macaroni is being boiled, you can finely chop the onion and tomato. Once the chopping is completed and the macaroni is cooked, take a saucepan and heat it on medium flame.

Step 3: Add 4 tablespoons of amul ghee to the pan and let it heat. Add chopped onions to it and saute until light brown.

  • Keypoint: The onion should not be overcooked as it has also to be cooked after adding tomato and other natural flavours.

Step 4: Add salt to taste and magic masala to it and fry for 3 minutes.

Step 5: Add tomato into it and fry for another 5 minutes.

  • Points to note:
  1. Ensure to serve the macaroni immediately after cooking before the cheese starts to get chewy.
  2. Stir continuously after adding cheese to avoid it sticking to the base of the pan.

Special Tip –  Do not cook much after adding the Amul cream to enjoy the creamy rich texture of the cream.

You can either serve this as a side dish or as a main dish itself. As I am a coffee lover, so I like having cold coffee with macaroni. These two make a good combination and give the indulgence of creamy macaroni with the frothy and rich flavour of the coffee. You can make your combination to have it with
